Fun and Healthful Vegetarian Meals
August 24, 2006
Cookbooks, magazines and restaurant menus are full of vegetarian dishes created with nutritious, appetizing food combinations. Whether you choose a vegetarian eating style or not, these dishes add variety, interest and flavor experiences to any eating plan:
- Polenta topped with homemade tomato sauce and freshly grated Parmesan cheese.
- Bean and low-fat cheese tacos or burritos.
- Focaccia (flat bread similar to pizza) with or without cheese.
- Portobello mushroom sandwich layered with stir-fried onions and peppers.
- Hummus (mashed chick peas) with veggies and pita triangles.
- Split-pea soup with rye bread.
- Tofu and veggie stir-fry.
With careful planning, vegetarian diets are healthful, nutritionally adequate and provide health benefits in the prevention and treatment of certain diseases.
